Cuban Style Garlic Lime Sirloin with Roasted Zucchini

Serves 4

Ingredients
For the steak
1 lb sirloin steak
10 cloves fresh garlic chopped
salt and pepper to taste
1 1/2 tsps of cumin
2 tsps fresh oregano
4 Tbs butter
3 Tbs olive oil
3 Tbs chopped cilantro
1/2 tsp of paprika
Juice of one large lime
For the zucchini
3 zucchini, quartered vertically
3 Tbs olive oil
1/2 Tbs paprika
1/2 Tbs cumin
1 tsp kosher salt
1 tsp fresh ground black pepper
3 Tbs chopped cilantro
Cotija cheese crumbled
Fresh lime wedges
Preparation
Preheat oven to 400 degrees.
Combine steak marinade ingredients (garlic, lime, cumin, oregano, cilantro, and paprika) in a small bowl. Sprinkle salt and pepper over steak. Rub marinade over both sides of steak and let sit for 10-15 minutes.
Lay out zucchini on baking sheet. Combine oil, paprika, cumin, salt, and pepper in a small bowl. Brush zucchini with mixture. Roast in oven for 15-20 minutes until tender.
While zucchini is roasting, heat cast iron skillet over medium high heat. Add butter and oil. Brush steak marinade off of steak into small bowl and reserve. Cook steak on both sides for about 3 minutes each side or until medium rare. Remove steak from pan and let rest.
Add reserved steak marinade to skillet and cook until fragrant, about 1 minute. Remove from heat.
Thinly slice steak against the grain. Serve with garlic lime sauce on top. Remove zucchini from oven and serve with crumbled cotija, cilantro, and lime wedges.
